Bebek Betutu Bali (Duck Recipe)

Bali is one most popular destination in the world, that's why no wonder if one of Balinesse food are so popular for many peoples in the world too. It calls Bebek Betutu Bali, Bebek means duck in bahasa Indonesia.

I would like to show you how to cook Bebek/ Duck Bali Betutu in Australian BBQ. It is very simple and delicious. But in this case I will skip the chilli and sambal because we don't eat spicy very often. Because it is little bit difficult to find casava leaves in Australia, so I will pick up some sweet potato leaves that i have been growing them on my pot. Or probably you can find casava leaves at nearest Asian grocery. Otherwise you can skip this ingredient, it wouldn't problem at all.

What you need to prepare for the ingredients for Bebek Betutu Bali serve 2 peoples :
  • 2 pcs Maryland Duck (Duck Breast) 
  • Banana leaves
  • Aluminium foil
  • Sweet potato leaves (casava leaves), basil leaves, bay leaves
  • Yellow marinate. All of these ingredients need to blend are 1 shallot & 2 garlic, fresh ginger,  a bit galangal, lemongrass, 1 tb spoon turmeric, 1 tb spoon coriander, 1/2 tea spoon white pepper powder, 1/2 tea spoon nutmeg, chilli but optional, 1 tea spoon salt, brown coconut sugar, and a bit water

How to cook Duck Bebek Betutu Bali?
  1. Rub all over the duck with yellow marinated then mix with casava & basil leaves
  2. Wrap the duck on banana leaves and add bay leaves on the top, then wrap it again with aluminium foil
  3. Put in BBQ low to medium heat 1-2 hours to get tender one's
