How to cook dry fish green chilli?
Oil on hot pan
Fried the dry fish until brown colour then put on side first
Fried chop of shallot & garlic, follow by green chilli and stinky beans
Add a bit salt, sugar and seasoning if required
Put back in the dry fish
Mix well and it should be ready!
It is very simple and serve with Jasmine rice and taste so yummy!
Chicken Adobo is originally from Phillipine, Indonesia is close to Phillipine so some Indonesian as well like to cook this chicken recipe, it is very easy to cook chicken Adobo but it is taste amazing. You can serve chicken Adobo with Jasmine rice. Originally chicken Adobo looks so black because they will put a lot of black pepper, also they wouldn't add any vegetables. But I would cook it on my way the chicken Adobo still taste amazing, my partner said he loves it a lot.
Here below the ingredients to cook chicken Adobo :
1 kg chicken (I use tight fillet because it is my fav part)
A bit olive oil
Chop of onion (shallot) and garlic
1/4 tea spoon salt
Black pepper or crack black pepper
3 table spoon soy sauce
8 table spoon rice white vinegar
2 table spoon sugar
1/4 tea spoon corn flour mix with a bit water to thickness
a bit water if required
Chop of spring onion for ganish
Beans and mushroom, you can use another vegetables too
Chilli *optional

How to cook the chicken Adobo?
Put a bit olive oil into the hot pan
Fried the chicken until brown colour and until crispy enough, don't forget seasoning with salt, then put on the side first
Reduce the oil, fried the chop of onion and garlic then chicken back in
Add soy sauce, white rice vinegar, sugar & black pepper
Lid on about 15-20 minutes until the chicken is cook
Add chop of vegetables 5-10 minutes before ready
Add water if required
Then for thickness add corn starch
Garnish them with chop of spring onion. Easy and taste amazing!

Duck is a bit expensive in Australia, but we always trying cook different thing each day to make my partner happy because he likes good food. This duck recipe is very simple but we guarantee you would love it, it's so delicious. Actually this kind of Gordon Ramsay recipe, but I cook it in my way.
To cook this duck recipe is so easy, you even don't need oil, just salt, pepper and thyme. I serving the duck with potato baked and fried asparagus plus gravy sauce.
The ingredients that you need to cook the duck (serving 2 persons) :
Duck maryland or duck breast
Salt & black pepper
Fresh thyme
Gravy powder

How to cook the duck?
Crack the duck with salt, pepper and add thyme on it
Fried the duck without oil until brown colour on each side on medium heat
Then put in oven 180 degrees for 20-30 minutes to get medium rare
Make normal gravy and add little bit the juice of the duck on the gravy so the gravy will taste more delicious

I love chicken and I think everyone eating chicken on their daily life for lunch or dinner menu. I love tight part of the chicken with skin on it because it's taste delicious. Even many peoples don't like to eat the skin because there is contain fat (oil) on the skin. But I think the chicken skin is the best part.
The dinner menu on this article is chicken with kaffir lime, and it is my own recipe, and I guarantee you would love it. This chicken recipe goes so well with Jasmine rice too.
What you need for ingredients :
Chicken 1kg (I use fillet with skin because I love it)
1/2 tea spoon Salt
1/4 tea spoon White pepper powder
1/4 tea spoon turmeric powder
1/2 tea spoon paprika powder
3 tb plain yoghurt
Chop shallot/onion
Olive oil
Water *if required
Fresh kafiar Lime leaves
Fresh coriander
Beans
Chilli if required
Chop of mushroom and capsicum, I skip this because I don't have these in my fridge, but it would taste a lot better with mushroom & capsicum

How to cook the chicken kaffir lime?
Marinate the chicken with salt, pepper, turmeric, paprika powder, crushed garlic and plain yoghurt, you can place it first in the fridge for few hours if you would
Fried chop of onion (shallot) & garlic until brown colour
Then chicken in, don't forget to flip over
Add Kaffir lime leaves
Lid on for 5-10 minutes
Add a bit water, lid on until cook
Then 5- 10 minutes before serve add the vegetables

One of our favourite dish is sweet sour chicken, it is taste sweet, salty and a bit sour and so yummy! You can serve this sweet sour chicken with Jasmine rice. I don't like something complicated, so I would like to show you to cook something simple but taste amazing.
What you need for the ingredients of sweet sour chicken :
600gr chicken fillet cut into small pcs
salt and pepper
2 table spoon corn flour
2 table spoon soy sauce
3 table spoon tomato paste
3 table spoon apple cider
1,5 table spoon tamarind pure
2 table spoon natural honey
1 chop capsicum
1 chop onion
1 chop garlic

How to cook the sweet sour chicken?
Seasoning chicken with salt and pepper
Then marinate with corn flour and rub all over with egg yolk
Fried the chicken on oil hot pan then put on the side 1st
Reduce the oil, then fried chop of shallot (onion) & garlic
Follow by capsicum
Then add soy sauce, apple cider, natural honey, and tamarind pure
Taste it and ready to serve!

So one day someone told me, he was in the pub and he had pork belly for lunch and it was pork belly with apple sauce, so I though giddy up I should try it too at home for our dinner.
It can be tricky to cook pork belly to get the right crackling, but I will show you how to easy to cook it. Easy and delicious pork belly crackling with apple sauce.
What you need for the ingredients of pork belly crackling :
Good quality pork belly (free range if possible)
Apple sauce
2-3 crushed garlic
Salt & pepper
White vinegar
Paper towels
Beef stock

How to cook the pork belly?
Turn on the oven 250 - 300 degrees or maximum heat, remember make sure the oven is hot enough this will help to get best crackling
Marinate with salt & pepper, apple sauce and crushed garlic all over the meat
Clean up the pork belly specially on the skin crackling with paper towels
Wipe the skin with white vinegar then rub all over with salt. Let it dry for few minutes or dry it off with paper towel and rub all over the skin with salt again
Place it on the try, put in oven for 10-15 minutes
Turn down the oven to 180 degrees
Place pork belly on another try with beef stock as the juice
Then put in oven for another 1 until 1,5 hours
Turn the tray position to get same heat from the oven

Bali is one most popular destination in the world, that's why no wonder if one of Balinesse food are so popular for many peoples in the world too. It calls Bebek Betutu Bali, Bebek means duck in bahasa Indonesia.
I would like to show you how to cook Bebek/ Duck Bali Betutu in Australian BBQ. It is very simple and delicious. But in this case I will skip the chilli and sambal because we don't eat spicy very often. Because it is little bit difficult to find casava leaves in Australia, so I will pick up some sweet potato leaves that i have been growing them on my pot. Or probably you can find casava leaves at nearest Asian grocery. Otherwise you can skip this ingredient, it wouldn't problem at all.
What you need to prepare for the ingredients for Bebek Betutu Bali serve 2 peoples :
2 pcs Maryland Duck (Duck Breast)
Banana leaves
Aluminium foil
Sweet potato leaves (casava leaves), basil leaves, bay leaves
Yellow marinate. All of these ingredients need to blend are 1 shallot & 2 garlic, fresh ginger, a bit galangal, lemongrass, 1 tb spoon turmeric, 1 tb spoon coriander, 1/2 tea spoon white pepper powder, 1/2 tea spoon nutmeg, chilli but optional, 1 tea spoon salt, brown coconut sugar, and a bit water

Rub all over the duck with yellow marinated then mix with casava & basil leaves
Wrap the duck on banana leaves and add bay leaves on the top, then wrap it again with aluminium foil
Put in BBQ low to medium heat 1-2 hours to get tender one's
